Try this truly delicious variation next time you get a craving for decadent fried chicken. Flax seed, which is high in omega-3 fatty acids, is available in larger grocery stores or health food stores. Store it in the fridge to keep it fresh.

1/2 cup low sodium soy sauce
1 clove garlic, crushed
4 uncooked chicken breasts, skins removed
1/4 cup flax seeds
1/4 cup bread crumbs
2 tablespoons wheat germ
2 tablespoons sesame seeds
2 tablespoons dried parsley
1 tablespoon canola oil


Combine soy sauce and garlic in a small dish and marinate raw chicken pieces for 10-20 minutes, turning once.

Grind flax seed in blender or coffee grinder and mix with wheat germ, bread crumbs, sesame seeds, and parsley.

Remove chicken from soy sauce and roll in breading mixture. Lay on greased baking sheet. Drizzle with oil. Bake 25 to 35 minutes at 400 degrees, until juices run clear when chicken is pierced.
